Starting today, and over the next few months, Bread Garden Catering is introducing several brand new salads, sandwiches and hot entreés to liven up your lunches.

This month we're introducing three new salads...

Kale with Roasted Butternut Squash Salad

Announcing our newest menu item: Quinoa Salad

A delicious salad with a Southwestern feel – and an ideal switch for someone who loves our healthy Mediterranean Orzo salad, but wants a different taste now and then. Or, for anyone who loves the nutty, crunchy taste of quinoa.

Along with quinoa, this salad features:

  • • Honey and chipotle dressing
  • • Black beans
  • • Chickpeas
  • • Tomato
  • • Pepper
  • • Onion
  • • Corn
Quinoa Salad is available with our gourmet classic package, or on its own as a side dish. Look for another tasty quinoa dish with an SoB (that’s South of the Border!) flavour, coming next month, along with a few more sandwich options.

From Taste Test to You

The story behind our new Quinoa Salad

This month, in adding Quinoa Salad to our menu, I realized how often we’re asked, “How did you come up with this scrumptious new menu item?”

Here’s a little taste of how we “come up with that”!
Sometimes the idea for an ingredient occurs to me while I’m shopping in a supermarket, in an ethnic or specialty store, or at a farmers’ market. Sometimes one of our clients makes a suggestion, or maybe a staff member.

Here’s the story behind our new Quinoa (Keen-wah) Salad. A few years ago, I went on an Amazon Adventure holiday. I was served at least one quinoa-based dish every day – and this was before quinoa started becoming so popular. Then, more recently, I saw a CBC News report about the United Nations declaring this the Year of Quinoa. It got me thinking. How could we bring Quinoa to you?

We are an official Climate Smart Business

At Pacific Coast Catering Group, we believe that if we act now, in a responsible way, businesses like ours and people like us can moderate the effects of climate change. But, as we discovered, it’s not an easy path to take. We had to work hard and devote money to change practices that negatively affect our environment. Over the past year, we’ve made a deliberate effort to reduce our waste, carbon dioxide emissions and atmospheric pollutants by changing the way we do certain things – and by lowering our overall energy consumption.

Here are some of the changes we’re proud to have accomplished over the past year:

1. We reduced our gasoline consumption by nearly 15 percent. How? First, we started replacing the old vans in our delivery fleet with the much more economical Ford Transit commercial vans. Next, we refined our delivery routes and timing to reduce the total distance our vans have to travel each day. Finally, we changed the way we use our propane burners. Now we turn these on full only while we are actually cooking. We turn the burners down, or else right off, between batches....
